Dayne Weaver - Pitmaster Supreme. Burnt off majority of his arm hair. Never had braces but has perfect teeth.
Ashley Weaver - Cashier, HR/PR, and Dayne's wife. Handles literally everything except the meat. Now regrets turning down braces in middle school.
Chris Vuelvas- Prep/Line Cook. The comedic relief for the team and can be counted on for inappropriate comments on the fly. Not sure about the braces situation but he's like, really cool.
Thomas Loven - Pitmaster Extraordinaire. UNT grad but prefers to burn off arm (and eyebrow, and beard) hair with Dayne. Definitely had braces.
We are also blessed to have a multitude of family (and friends that we consider family) who volunteer their time every weekend to help out.
Dayne Weaver started his journey in Texas barbecue as a backyard smoker enthusiast. His father-in-law left a small kettle grill in his backyard in 2017, which Weaver converted into a mini-smoker. He threw a brisket on and was immediately hooked. He began smoking meat every weekend; however, barbecuing is an expensive hobby. Weaver’s wife, Ashley, told him that if he was going to continue to cook regularly, he needed to find someone to buy it. That’s how “Dayne’s Underground Barbecue” was born.
Weaver posted on social media that he would be selling meats and sides from his front yard, and the response was overwhelming- he sold out in less than an hour. Weaver decided to hold an underground barbecue sale the last Sunday of every month. The crowd continued to grow and bring people from all over the state of Texas who wanted great barbecue- including a reporter and photographer from the Dallas Observer. Once an article was released singing Weaver’s praises, Ashley knew that Weaver had to register his business. Encouraged by his wife, he named the brand Dayne’s Craft Barbecue. The duo held pop-ups all over D/FW, which is where they met Thomas Loven and his family. Loven heard of the Weavers via the Dallas Observer article, and has since been by their side every smoky step of the way.
Today, Dayne’s Craft Barbecue is a staple at Lola’s Trailer Park in Fort Worth, where people come from near and far every Friday, Saturday & Sunday (except the last Sunday of the month, which they spend with their families). Ashley handles the customers, marketing, and finances, Chris handles the sides, and Thomas serves as Dayne’s right-hand man.

We strive to make our city proud by doing Texas Barbecue the right way. That means we use only prime meat cuts, and 100% Post Oak and Pecan Wood strictly on our offset smoker. We take a very time-consuming, detail-oriented approach in making sure we are producing the most aesthetically flavorful product possible. That's what we mean when we refer to it as our craft.
