It Started with a Leftover Kettle Grill
In 2017, a small backyard grill and a single brisket sparked a passion that couldn't be tamed. What started as "Dayne’s Underground Barbecue"—selling meats from a front yard in North Texas—quickly exploded into a sold-out sensation. Fueled by social media and a leap of faith, Dayne and Ashley Weaver turned a hobby into a mission to do Texas Barbecue the right way.

Built on Family & Hustle
Ashley knew from the first sold-out hour that this was more than a weekend hobby. Encouraged by her vision, Dayne’s Craft Barbecue was born. From pop-ups across D/FW to a two-year residency at Lola’s Trailer Park, we’ve spent years refining our process and establishing our brand. Today, we are proud to finally call Aledo, TX, our permanent home with our first brick-and-mortar restaurant.

To us, "Craft" means taking the time-consuming, detail-oriented approach required to produce the most aesthetically flavorful product possible. We use only prime meat cuts and strictly 100% Post Oak wood in our offset smokers. We aren't promising total perfection—we're promising to give every single cook everything we’ve got. That is our craft, and that is our promise to Aledo.
